Onion Bhajee Pakora (Fritters)
Ingredients:

2 level cups of Map Gram Flour
1tsp Map cumin seeds
1tsp freshly chopped coriander leaves
1tsp salt, 1/2 tsp map chilli powder
1 medium sized onion finely chopped
1/4 tsp bicarbonate of soda

Cooking Instructions:

Mix ingredients in a bowl with 1/4 pint of water
Mix to a thick batter. Set aside for 5 minutes
Take heaped tablespoon of mix and drop carefully into hot oil, ina deep fryer
Fry for approximately 3 minutes unntil bhajees/pakora (fritters) become medium brown & crisp
Remove and shake of excess oil
Sprinkle with map garam masala and serve!

Lamb or Chicken Curry
Ingredients:

2 Tblsp vegetable oil
3tsp Map Hot Curry Powder
1tin (400g) Map peeled Plum tomatoes
1tsp salt
1 medium sized onion
2Tblsp yoghurt

Cooking Instructions:

Fry finely chopped onion in vegetable oil untill light brown
Add the meat and fry for a further 5 minutes and keep stirring
Add tomatoes, hot curry powder, salt and yogurt
Continue stirring for a further 5 minutes
Add two cups of water and allow to simmer until the meat is tender
Serve with a bed of White Pearl Basmati rice or with Nan bread
